It's official : 
Spring is here!
 
What better way to celebrate the coming of brighter days with the sight of these delicious round and sweet tasting rolls filled with a creamy pudding !?
These pudding rolls are a treat to your eyes and to your taste buds  ! ;-)
We've been making these buns several times over the years  but forgot all about them... I know, that's incomprehensible!  
Their creamy sweetness was a far and distant memory...  What a joy it was to rediscover these pudding buns once again!


If you are looking for a delightful decadent dessert on Easter that puts a smile on your guests faces , these rolls will do the trick ! ;-)
 These '' Room-mastellen'' (that's their Belgian name) will become your very favorite, just wait and see , or better wait and taste !!!



 

Let's get started!  

For 15 ''Room-mastellen''

What you'll need :

 
 For the dough : 
 
  •  500 gr. flour
  • 12 gr. instant yeast
  • 1 egg yolk 
  • 250 ml lukewarm milk
  • 50 gr. sugar
  • 10 gr. salt
  • 80 gr. butter 


For the pudding :
  •   500 ml milk
  • 125 gr. sugar
  • 50 gr. of pudding powder
  • 1 egg yolk
Start with adding some lukewarm milk to your yeast to get it started properly.
Now add the sugar and salt.







 Now add almost all of the milk at once.


Start mixing a bit with your hands and add the egg yolk.


Add the butter and start kneading!
You may need to add some more milk if the mixture is a little too dry.




 Your dough should be soft and smooth after about 10 minutes of kneading.



Cover the dough with a clean damp cloth. Let rise until doubled in size, about 1 hour.

 




While the dough is rising nicely, let's start by making the pudding !

Start by heating your milk with half of the sugar on medium heat.


In a separate bowl combine the pudding powder and the other half of the sugar.



 Add a little warm milk to your powder-mixture together and add the egg yolk and mix well so that there are no lumps.
This mixture is called composition.


 Take the milk from the heat when it reaches it's boiling point and add some to your composition ans stir well.


Next add your composition to the boiling milk and stir very well.


Let it cook for about a minute .

 Immediately pour the pudding on a heat-resistant surface and spread out evenly.



Cover with some cling film or a plastic freezer bag and let it cool completely . This way your pudding will not dry out and form a ''skin''.





Your dough should be doubled in size by now ! 


 Form 15 balls from your dough and shape into neat balls.


Now with the palm of your hand , slightly press the balls flat.
Cover and let rise for about 20 minutes.


After 20 minutes push the dough in the middle with the tips of your fingers to create a little hole. 





Cover and let rise again.
Repeat this step 2 more times.



Take your pudding and put in a piping bag.
 And now the fun part !!! :-) Time to start piping the pudding !
There should be just enough pudding for the whole batch ! 

 

Let the rolls rise uncovered for another 15 minutes.
Preheat the oven at 220 °C.
 Brush some egg wash on the sides of the buns.

  

Bake at 220°C for about 10 minutes until golden brown.



 Don't they look amazing?!
 Looks like they came right from the viennoiserie !

Let them cool fully then dust with powdered sugar, using a sieve.


A little tip !
You can make the dough in your breadbaking machine as well! ;-) Handy and saves time too!
