Who else shares that joy of going for an evening stroll in the garden and breathing in the cooler evening air that seems to sooth us after a day full of activities and impressions?



A moment to reflect and meditate on the beauty that surrounds you.
A moment to forget your worries. 
A moment to inhale flowery sweetness...



One of the most beautiful blooms that stir our hearts and captures our eye time and time again are...
Roses
These sweet cupped hearts and soft pastel colored petals seems to fold their petals around our soul and spreads a radiance of joy that make our hearts sing with happiness! 


The thrill of seeing a rosebud transform into a blooming rose is a miracle in itself ! 


 The beautiful Old English Rose, Louis Odier has a warm pink that is softly shaded with lilac.
 It carries a rich perfume !  




Look how this rose bathes itself in the evening light !


Roses are beautiful to tend and they
 look pretty in a vase ~ but we also use them in our kitchen...


It's a joy to use these delicate petals 
and turn them into something delectable and even medicinal...



 ~Rose infused oil~ 



 This rose oil can be used in all sorts of medicinal concoctions after it has steeped for about two weeks.
 That results in a soothing oil that can be added to your bodylotion,
moisturizer, as a base for making your own lipbalm that nourishes and soothes chapped lips ,...





~ How to harvest roses ~

Gather the petals when the rose is fully expanded.
 Use organic roses that are untreated, 
unsprayed and good smelling !
Gather them in the late morning when the dew has dried.
Hold the petals together with the tips of your fingers and twist.




We fill a jar and pack it full with the petals ...



 Add your favorite oil , such as Almond, Jojoba or Sunflower. 


Incorporate it well.


 Let steep for about two to three weeks ,out of direct sunlight.
Sieve the oil and discard the petals.
You just made your own:

 Did you know that it is beneficial for your rose bushes to have lavender nearby?
 It keeps the lice away that like to invade and harm them!


  Variegata di Bologna is an exellent Old Bourbon Rose
to adorn your garden !


 Sometimes when the wind blows softly in the right direction
 it carries a note of these precious blooms !

The-almost-Summer-time Season



Summer~Time is approaching and makes it's arrival known by the sudden burst of green 
and all kinds of pink and purple hues around us ! 
It never cease to amaze us! 



Who else has that longing to add some summery tastes and smells to their food this time of year ?! 
Cooking up a fresh meal or making a crisp salad is the ultimate way to incorporate the scent and aroma of Summer.

Even if we are so eager for Summer to arrive for real , the reality is a tiny bit different ;-) 
The unpredictable weather can very rapidly take a turn and ruin our "Almost-Summer" plans ! 
Here we are, all ready for Summer, with our sleeves rolled up and sunshades pulled open and suddenly the raindrops fall and allas we are back inside our cozy homes !  

But remember : 

Every day is one step closer to summer ! 


So as an ode to " the-almost-Summer-time'' , may we present to you the comfort food that is a link between the Spring and Summer ...
You will love this delicious sweet cake with a subtle but resfreshing touch of Summer tartness  :
 Lemon !

Resfreshing Lemon Cream Cheese Cake
 



Yields 2 Lemon Cakes

Ingredients you will need : 


  • 360 grams (3 sticks) unsalted butter, at room temperature
  • 225 grams (8 ounces) cream cheese, at room temperature
  • 600 grams (3 cups) sugar
  • 6 eggs
  • 1 1/2 teaspoon vanilla extract
  • 360 grams (3 cups) all-purpose flour
  • 2 teaspoons salt
  •  The zest and juice of 2-3 organic lemons
 

Preheat oven to 180 ℃ .
Make sure that all your ingredients are at room temperature before you start.


  With an electric mixer, beat butter and cream cheese until smooth and silky.






Add sugar; beat until light and fluffy, for about 5 minutes.



 Add the eggs, one at a time, beating well after each addition.





Mix until creamy !  



Add the vanilla,in our case we used 3 sachets of vanilla sugar since we didn't have any on hand at that moment ! 


Wash your organic lemons and zest them. 


Juice the lemons. Lovely scent, right ?!  

 Add to the mixture. 


With your mixer on low, add the flour and salt in two additions, beating until just combined.




 Generously coat two loaf pans with butter and dust with flour for easy removal afterwards! 



  Pour in batter


Bake until golden at 180 ℃ for 50 - 75 minutes and a toothpick inserted in the centers comes out almost clean.
Cover the cakes with aluminum foil if the tops begin to brown too quickly.  

Cool 10 minutes in the pan. Turn out the cakes and let cool completely on a wire rack.




 All ready for your loved ones to enjoy a slice of delicious
