Christmas time is approaching and our home is wrapped in the soft glow of fairy lights, flickering candles 
and the smell of a fresh pine tree lingering in the air ...
Awakening the inner joy and longing for
the Light itself...


Christmas magic is silent.
You don't hear it - you feel it ,you know it,
you believe it.


What better way is there to set the mood with the delicious smell of home baked cookies this season ?
We decided on

~Festive Woodland Cookies~
`









~ 115 gr butter , at room temperature
~ 150 gr brown sugar
~ dash of salt
~ grated peel of half a lemon
~ 25ml milk
~ 250 gr white flour
~ 10 gr baking powder
~ 15 gr mixed spice

Rub butter and sugar together and add salt and the grated lemon peel and mix.
Add milk and slowly add all the other ingredients while kneading until firm.
Wrap the dough in clingfilm and let rest in the refridgerator for about 2 days so the spices can develop.


On day 2 take the dough out and knead. Roll out on a dusted work surface until smooth and even .
Cut out in your favorite woodland shapes. Lay on covered baking sheets , leaving enough room for them to rise while baking.



Preheat oven and bake at 160℃ for about 30 min. depending on the size of your cookies.
After baking let them cool a bit on the baking sheets before transferring them to a wire rack to cool completely.

You can also decide to glaze the cookies once they are cooled ;)

Rhubarb-Almond Cake

 

Rhubarb-Almond Cake

  Today we'd love the share the recipe for a delicious cake with you!

It's a sweet, tangy cake with a hint of almond, for everyone who loves marzipan...  You will enjoy this cake ! ;-) 

 

Ingredients
  • 1 cup plus 1 tablespoon sugar, divided
  • 1/2 cup (8 tablespoons) unsalted butter, softened at room temperature
  • 2 eggs
  • 1 cup Greek yogurt
  • 1 tablespoon orange zest
  • 3/4 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup almond meal
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • About 0.75 lbs rhubarb ( 士 350 grams)
  • 1/3 cup sliced almonds
  • Powdered sugar for serving, if desired

 

Instructions
  1. Pre-heat your oven to 180℃. Line the bottom of a 10-inch springform pan with a round of parchment paper. Then generously coat the parchment paper and the sides of the springform pan with butter. Set aside.                                                           
  2.  In the bowl of your stand mixer, beat 1 cup of the sugar and the butter on medium speed until light and creamy, about 3 minutes. Add the eggs in one at a time, mixing after each addition. Then beat in the yogurt, orange zest and all the extracts.                                                                                                  
  3. In a medium bowl, combine the flours, baking powder, baking soda and salt. Add these dry ingredients to the cake batter, adding in about one-third at a time, mixing on low speed until no more white streaks remain. Set aside.                                      
  4. Cut the rhubarb stalks into regular pieces.                                    
  5. Spread about half of the cake batter in an even layer on the bottom of your prepared springform pan. The batter will be thick and creamy. Layer about half of the rhubarb on top. Then spread the remaining cake batter over the rhubarb. Arrange the remaining rhubarb pieces on top. Sprinkle the sliced almonds and the remaining 1 tablespoon of sugar over the top of the cake.                                                                                                      
  6. Transfer the cake to your pre-heated oven and bake for 45-50 minutes, or until a toothpick inserted into the middle comes out clean. Remove the cake form the oven and set it on a wire rack to cool. Once cooled, run a spatula around the outer edge of the cake and release the sides of the springform pan.                  
  7. Cut the cake into slices and serve with a generous dusting of powdered sugar !

You can wrap a pretty lace ribbon around the cake and place a beautiful rose at the side for a dreamy and romantic touche! 💕

A Birthday wouldn't be complete without some sweet smelling flowers! 


Opening a cute little present from Mom & Dad at the Birthday table is a tradition since we were little ! 
Oh and this sweet present...

After opening these adorable gifts we went en route ! 

Grabbing a delicious snack , which consisted of Fish~Burger , Hummus Snack and a Warm Waffle on to go, 
we went to one of our favorite open air museums ! 
We've visited this place since we were little toddlers ,
 pushed along in a stroller ! ;-) 
And still this place holds something peaceful and takes one back into time !
