For the love of Violets
What's so lovely about Spring is that nature awakens during these days when rain and sunshine seem to compete with each other and slowly after a day or two of sunny weather, green hues in all kinds of shades can be seen throughout the garden!
We let out a happy sigh of contentment and remember once again how beautiful Spring really is!
Passing these little purple blossoms on a Spring evening walk was such a joy and although one can easily pass them by because they are so small , they draw attention by modestly enjoying their spot!
Sweet Violets are so fragrant and with a sniff they take us back to the good ol' times!
Such old~fashioned floral aroma can take us back in a blink of an eye and the
sweet flavour will remind you of the Violet Candies Grandma used to treat
you with after you finished helping her in the kitchen on a warm Saturday afternoon!
Sweet Violet blossoms are unbelievably fragrant
and seem to sprout up from nowhere this spring.
A nice way to capture their
lovely essence is to make Violet~syrup from their petals !
Let's start with picking the Violets.
Be sure the flowers have not been sprayed or fed with any chemicals whatsoever and come from a clean area !
Gather as many as you can and remove the stems.
We picked about two cups of them !
Boil equal parts of water and pour over the petals.
Allow to steep for about 24 hours.
Look how beautiful the violets colored the water after 24 hours of steeping !
Strain the violet infused water through a fine mesh sieve or a coffee filter bag like we did.
Gently
press any additional liquid from the violets.
Look how the Violets lost their purple color and turned into a greenish~blue color!
For every cup of liquid yielded, add
1 cup of sugar.
Now add equal parts of sugar and add that to the flavoured water that you transferred into a pot.
Stir until the sugar is dissolved and slowly bring it to a boil.
Stir in a little fresh lemon juice, a few drops at a time to turn the infusion to a purple color !
Look at the color !
How can this turn into a beautiful
purplish color ?!
Wait and see the magic !
Isn't this amazing ?!
Boil the syrup for about 2-3 minutes and pour into clean sterilized bottles or jars.
Let cool completly before labeling !
